A variety of foxtail millet

Before usage, soak the millets
in 3–4 times as much water, for at least 6 hours. Drain the mixture until the
water is clear.

Foxtail millet can also be made
as a porridge or prepared with a lighter texture. Use millet to water ratio of
2:1.

soaked millets for a few whistles, after which the millets should be gritty.
For a fluffy texture, use a 2:1 ratio of water to millet, and a 3:1 ratio for a
softer consistency.
